Country-Style Butternut Squash

4 cups of butternut squash puree

1 tsp. salt

1/2 tsp. pepper

1/4 cup of onion, diced

8 strips of cooked bacon

3 slices of bread, cubed

1/2 cup cottage cheese

1/2 cup shredded cheddar cheese

1/2 cup sour cream

 

Save half of the bacon. Crumble the other half and combine with all of the other ingredients. Mix well.

 

Place it in a well-buttered casserole dish. Sprinkle with the remaining bacon. Cover and microwave on high for 6-8 minutes in a 2 quart microwavable dish. Yields 6 servings.
