Spicy Squash with Chicken

1 1/2 cups butternut squash, cubed

1/2 tsp. ground nutmeg

6 oz. Chicken breast, bite-sized pieces

1/4 tsp. salt

1 medium onion, chopped

1/4 tsp. sugar

1/3 cup raisins

2 1/2 cups of cooked rice

 6-7 cloves of garlic, chopped

2 tsp. curry powder

1/2 tsp. crushed red pepper


Heat some oil in a skillet over medium flame until hot. Sauté squash for around 9 minutes.  Add chicken, onion, raisins, and garlic. Sauté until chicken is cooked, about 5 minutes. Add remaining ingredients. Remove from heat when hot.  Yields 6 servings.
