Stuffed Squash Casserole

1 medium Buttercup squash, cooked

1/4 c. butter

Salt to taste

6 slices bacon, fried and crumbled

3 slices bread cubes

1 1/2 c. shredded cheddar cheese (save 1/2 c. for topping)

 

1. Scoop out cooked squash, while still warm. Add butter, salt bacon, bread and 1 cup cheese.

2. Put in a 1 1/2 to 2 quart buttered casserole dish. Top with the rest of the cheese.

3. Bake, covered for 30 minutes at 350 degrees.
