Winter Vegetable Soup |
4 medium potatoes, diced 2 turnips, diced 2 large carrots, diced 1/2 medium butternut squash, diced 1 tsp. garlic, diced 1 tsp. salt 1 1/2 tsp. pepper 1/2 tsp. nutmeg 1 chicken broth cube 3 cups water
Microwave carrots and turnips for 5 minutes on high, turning once. Mash.
Microwave potatoes and squash for 4 minutes on high, turning once. Mash.
Bring water, broth cube, garlic and salt to a boil in a soup pot. Add mashed vegetables. Mix well with pepper and nutmeg, Bring to a boil and then simmer for 1 hour. Yields 3—1 cup servings.
